Episode 8. Potatoes

There are two ways how you can cook vegetables using water. This can be done by immersing food in boiling water and by heating food in steam from boiling water.
When you immerse foodstuff in boiling water make sure that foodstuff is completely covered with water or fully submerged in it. This will guarantee good warm up of foodstuff. Dish size should be adequate to the amount of vegetables you are going to cook.
When you heat food in steam from boiling water try to use saucepan with metal net inset in it. If there is no such metal net you may use colander.

Pour some water on the bottom the saucepan when cooking in steam. Water turns from liquid into vapour or a gaseous substance. Cook vegetables in steam in comparison with cooking in boiling water has advantages and disadvantages. A condition that puts cooking in steam in a favourable position is that less minerals leach (drain away) from vegetables. Moreover, vegetables that are cooked in steam have taste and flavor that is close to taste and flavor to fresh vegetables. Also there is a disadvantage that puts cooking in steam technique in an unfavorable position in relation to cooking in boiling water. This is a long cook time and destructive effect to vitamins that are contained in vegetables.

Boiled potatoes – whole

Potatoes are quite round vegetables with brown or red skins and white insides. They grow under the ground
Boil is when hot liquid boils or when you boil it, bubbles appear in it and it starts to change into steam or vapour
Jacket is the skin of a potato

Step 1. Wash potatoes properly
—2. Immerse potatoes in cold water for 2 hours. Pour out all the water
—3. Immerse potatoes in cold water again for 5 hours. Pour out all the water
—4. Boil water in a saucepan
—5. Add 3 tablespoons on salt
—5. Immerse potatoes in boiling water
—6. Cook it till it is ready
—7. You can easily pierce it with knife or fork

Boiled potatoes – peeled

Step 1. Wash potatoes properly
—2. Peel off the skin of a potato
—3. Chop each potato in 4 pieces
—4. Immerse potatoes in cold water for 2 hours. Pour out all the water
—5. Immerse potatoes in cold water again for 5 hours. Pour out all the water
—6. Boil water in a saucepan
—7. Add salt to your taste
—8. Immerse potatoes in boiling water
—9. Cook it till it is ready
—10. You can easily pierce it with knife or fork

Steamed potatoes

Step 1. Wash potatoes properly
—2. Immerse potatoes in cold water for 2 hours. Pour out all the water
—3. Immerse potatoes in cold water again for 5 hours. Pour out all the water
—4. Take saucepan with metal net inset in it
—5. Add water and boil it
—6. Make sure the metal net does not touch the boiling water
—7. Put potatoes on the metal net
—8. Season with salt to your taste or add no salt as all
—9. Cook it till it is ready
—10. You can easily pierce it with knife or fork

Boiled potatoes with milk

Step 1. Wash potatoes properly
—2. Peel off the skin of a potato
—3. Chop each potato in small cubes
—4. Immerse potatoes in cold water for 2 hours. Pour out all the water
—5. Immerse potatoes in cold water again for 5 hours. Pour out all the water
—6. Boil water in a saucepan
—7. Season with salt to your taste
—8. Immerse potatoes in boiling water for 10 minutes
—9. Pour out all the water
—10. Heat milk before you pour out the water
—11. Pour hot milk on the potatoes and keep cooking another 20 minutes
—12. Cook slowly to avoid burning
—13. Cook it till it is ready
—14. You can easily pierce it with knife or fork

Mashed potatoes

Puree is food which has been crushed or beaten so that it forms a thick, smooth liquid
To mash is reduce (for example potato) to a pulpy mass by crushing it
Step 1. Wash potatoes properly
—2. Peel off the skin of a potato
—3. Chop each potato in small cubes
—4. Immerse potatoes in cold water for 2 hours. Pour out all the water
—5. Immerse potatoes in cold water again for 5 hours. Pour out all the water
—6. Boil water in a saucepan
—7. Season with salt to your taste
—8. Immerse potatoes in boiling water
—9. Cook it till it is ready
—10. You can easily pierce it with knife or fork
—11. Pour out all the water
—12. Take masher and press forcefully on potatoes
—13. Keep adding hot milk and butter or just hot water instead of milk and butter
—14.Before serving a dish of mashed potatoes let it stay for 2 minutes with covered lid
